Eating the Rainbow

Focus is shifting slightly from portions of fruit and vegetables to diversity of plant based food in a week. 30 being the magic number.

Eat the rainbow is a good mantra for every day but even that can be hard.

However quick healthy standby staples can transform a simple salad. Here we have pickled red cabbage and black olives (in brine) that were scattered over everyday salad to brighten it up and encourage the diversity. Diversity in that plate is 6 – not including the extra virgin olive oil and dry dill.
